Take2 Consulting, LLC is seeking an AI & Digital Transformation Manager to lead the design and implementation of an AI-enabled operational intelligence system for Hertzog Meat Company. This role combines advisory expertise with technical execution to unify production, procurement, compliance, and financial data into one actionable platform.

Responsibilities

Partner with leadership to define AI-driven operational goals

Map current workflows across production, procurement, compliance, and finance

Develop a phased roadmap for AI adoption and system integration

Ensure compliance with USDA, HACCP, SQF/GFSI standards in all digital workflows

Lead change management and training for plant and office teams

Design and implement data integration architecture connecting VistaTrac, QuickBooks, Xpana, and other systems

Build real-time dashboards for production, yield, labor, and margin analysis (Power BI or similar)

Develop AI workflows for procurement forecasting, yield optimization, and compliance automation

Implement predictive modeling for raw material needs, labor planning, and margin protection

Automate executive reporting and communication (daily briefings, meeting summaries, compliance packets)
