Responsibilities
Calibrate/verify laboratory instrumentation
Perform in-coming, in-process and finished product laboratory testing
Perform pre-operational checks; visual inspection of production areas, ATP swabbing, allergen swabbing, and the coordinating of recleaning/resanitizing
Complete customer specific requirements and specifications
Follow frequency schedules for facility monitoring/verification; environmental, coolers, freezers, foamers, chemical concentrations, scales, etc
Prepare samples for outside testing service
Work with USDC inspector
Document verification of in-process production functions; monitor water and product temperature, dumping, desalting, injection, cure brine, cover brine
Document verification of production finished processing; metal detection performance, finished products settings, batch ratios, code dates, labels, stickers, weights, packaging materials, and product changeover
Communicate with outside service companies; sanitation, pest control, chemical control, outside laboratory, waste management, landscaping, and vendors
Complete all necessary paperwork
Other duties as assigned
Qualification
Required
High School Diploma-Required
Previous experience in a food manufacturing environment with an emphasis on QA/QC functions
1-2 years of experience as a QA/QC technician
Food/Protein experience
Ability to work early morning hours when needed (4am start) as a backup to the pre-op technician
Must be fluent in the English language and able to communicate effectively in verbal and written forms
Proficient in Microsoft office programs (Excel, Word, Outlook)
Must be familiar with laboratory equipment
Preferred
Some College-Preferred
Bilingual Spanish is a plus
Exposure to environmental monitoring processes is preferred
