Bread Production Manager
Crispelli's Bakery & Pizzeria is seeking a Bread Production Manager who will own the entire production process. The role involves leading bread production, managing staff, and ensuring operational excellence while maintaining product quality and safety standards.

Responsibilities
Primarily leads all bread production by utilizing bakery skills including, mixing, bench/shaping, proofing and baking as well as the management of all dough starters. Position is very hands on and leads by example
Responsible for hiring and developing Bread and Packaging staff
Responsible for setting Production Schedules based on Sales forecast for both in-house and wholesale demands while paying attention to any labor savings opportunity
Responsible for establishing or reworking process controls both in bread production and packaging
Responsible for maintaining and exceeding labor and food cost targets
Maintains proper inventory control including appropriate levels, freshness, product use dates and overall organization and cleanliness of our Bread and Packaging Teams
Accountable for all Bread Product Standards
Takes the lead in the training of all Bread team members
Work cross functionally with GM to maintain Morale and Teamwork
Effectively communicate with all Teams to problem solve
Assist in maintaining an updated recipe book for the Bread department and food cost models for the Bread department
Responsible for all daily, monthly and quarterly cleaning schedules to ensure first class housekeeping in all facets of our building. Ensures daily break down and cleaning to provide spotless equipment on a daily basis
Oversees the maintenance of a safe, secure and healthy work environment by establishing and enforcing standards in compliance with local and State Health Regulations and Requirements
Maintains all foodservice equipment by following operating instructions and training staff on proper usage. Utilizes mechanical aptitude to instruct and develop key staff members in adhering to proper routine preventative maintenance and usage of all bakery equipment
